
Have you ever spent years chasing a specific food memory from your childhood, only to find out it’s been long discontinued? If you grew up in the 90s or early 2000s, you might remember the pink and purple Nerds ice cream. If you haven't caught up on the first two recipes yet, we've already tackled a classic mint chip and a sophisticated Earl Grey with Earl Grey caramel. Now, we are diving straight into pure childhood nostalgia with this birthday cake blend because my husband looked at me and said, "You know what you should make? The birthday cake with nerds ice cream." And I said challenge accepted.
Conveniently, I had recently checked my pantry and found a bottle of Jenna Rae's liquid cake batter drops. For the longest time, I thought this was the least exciting flavor I owned (especially compared to the cookie dough and marshmallow options), mostly because it just tasted like plain vanilla.
However, I couldn't shake the idea of using it to build this birthday cake ice cream. From my past experience making sugar cookies and holiday sugar cookie syrups, I knew that butter extract is a pro level secret undertone that makes a significant difference in baked goods.
By pairing the Jenna Rae's cake batter drops with a splash of butter extract, I knew I need one last thing to round out the flavor: clear vanilla extract. This is hands down the ultimate secret weapon for that nostalgic, boxed cake mix taste—I knew I had the perfect "triple threat" foundation for an authentic birthday cake flavor. One other priority was sweet but not too sweet. Flavor is the largest priority these days!
