Ingredients: 2 cups Apple cider, spiced (I got spiced apple cider in the Juice aisle of Save On Foods. ); 1 tsp Apple Pie Spice mix; 3 tbsp Unsalted butter; 1/2 cup Brown Sugar, packed; 1/4 cup Heavy Cream; 1 tsp Corn Syrup (light or dark is okay); 1/2 tsp Salt; 1 tsp Vanilla extract or paste

Simmer the cider in a wide pan over medium heat until it’s down to about 45 ml (3 tbsp) and syrupy enough to coat a spoon. Remove the cider and set aside.

Melt the butter in the same saucepan over medium-low.

Whisk in the brown sugar, cream, corn syrup, salt, and cider reduction. Keep it at medium-low and whisk until it reaches a gentle simmer.

Let it bubble, whisking often. At first the bubbles are large and loose and it hisses — that’s water boiling off. When they turn small and dense across the whole surface and the sound drops to a quieter, thicker plop, start testing. (Under 3 minutes is almost always too soon.)

Turn off the heat and whisk in the vanilla. Cool to room temperature before judging consistency — it thickens substantially. If it looks like thick sauce in the hot pan, it’ll be hard candy when cold.
