Makes about 10 bagels. Built for an overnight rest (8–10 hours) with 5 g yeast. If you’re baking on a different schedule, adjust the yeast:

  • Same day, boiling about 5 hours after mixing (for example, mix at 7 am, boil at 12 pm): use 6 g (about 1¾ tsp).
  • 24 hours later: use 3 g (about 1 tsp).
