Same-Day Focaccia (Instant Yeast, Bread Machine Version)

Bread Machine Process

   Add the: water, 1/4 cup olive oil, salt, sugar, all-purpose flour, yeast, and 1/2 the rosemary into the bread machine in the order that your machine requires.

   Select the Dough setting. This should not involve a Bake cycle. Only heating, kneading, and resting.

   Once the dough cycle is complete, line a glass pie plate with a piece of parchment paper. Spread 2 tsp of olive oil all over it.

   Place the dough into the pie plate and gently stretch it into a the full circle size.

   Spread the rest of the olive oil on top.

   Cover with a damp cloth in a warm location until doubled in size.

   Preheat the oven to 450 degrees.

   Spread another 2 tsp oil on top.

   Use your fingers to poke deep dents (poke all the way down to the baking sheet). Sprinkle evenly with the rosemary, black pepper, and sea salt.

    Bake, until the crust is a light golden brown, about 17-20 minutes.

    Immediately after baking, flip the bread onto a cooling rack (do not let it cool in the pan). Gently brush 1 tsp of olive oil on top while hot.

    Let it cool completely before slicing and serving.
