Ingredients: 3 cups Store-bought apple cider; 10 tbsp Unsalted butter, melted and cooled; 2 Large eggs, room temperature; 1/2 cup Buttermilk, room temperature (Can sub for scant 1/2 cup milk + 1 tbsp lemon juice. ); 1/2 tbsp Vanilla Bean Paste (Can sub for vanilla extract. ); 2 cups All-purpose flour, spooned and leveled; 2 1/2 tsp Club House Apple pie spice (May need a bit more if your apple cider is not spiced. ); 1 tsp Baking powder; 1/2 tsp Baking soda; 3/4 tsp Salt; 1/3 cup Brown sugar, packed; 3 tbsp Unsalted butter, melted; 1/4 cup Vanilla Granulated sugar; 1/4 cup Granulated sugar

In a large bowl, whisk the brown sugar into the cooled melted butter until smooth. Alternatively, use a stand mixer with a paddle attachment.

Add the eggs one at a time, whisking after each.

Whisk in the cooled cider syrup, buttermilk, and vanilla.

Fold in the dry ingredients until just combined — a few streaks are fine. Do not beat it smooth. If using stand mixer, use paddle on lowest stir setting.

Using a mini cookie scoop, fill each muffin cup about ¾ full.

Place muffin tray into the oven immediately. Bake 13–14 minutes, rotating at 8. Donut holes are done when the tops spring back firmly rather than dent.

Melt the reserved 3 tbsp butter while they bake.

Turn out donut holes onto cooling rack and let them rest 5 minutes — long enough to firm up, still warm enough for butter to grab. Don't skip this; hot muffins crush.

Using a pastry brush, coat all donut holes gently. Brush the top and shoulders with melted butter, then dip straight down into the spiced sugar and lift straight up. No rolling, no tumbling. Set back on the rack, sugar side up.
